What's cooking this week

Because I have a guarantee of at least 3 adults and 4 kids for dinner every night this week, I'm going to put myself out there again and commit to a weekly menu.

I never posted after my first (and last) weekly menu since it took at least 3 weeks to work through it (due to unforeseen traveling circumstances that occur rather frequently around here). However, I am certain all will be made this week, so here it is.

Monday: Spaghetti with meat sauce. It was delicious but I didn't follow a recipe for this one except in my head. Sorry!

Tuesday: Ragin' Cajun jambalaya...my last bag from Texas! Since Nick is a fan, I'm happily sharing with him tonight! I'm also making his favorite dessert-Texas Sheet Cake. Yum.

Wednesday: New Years Eve: We always do appetizers to eat all night, so as of now we are having bacon-wrapped stuffed dates, spanakopita, baked brie, spinach dip, buffalo chicken tenders (from the store for the kids), hummus and assorted sweets yet to determined.

And Vueve du Vernay champagne, which is conveniently sold at my local Publix. Yea Publix!

Thursday: Pulled pork sandwiches (kids can do the pulling this time!), collard greens, fresh black-eyed peas and rice.

Not what I would usually serve along side these sandwiches, but it's New Year's Day so I'm offering up some traditional southern dishes for my house full of southerners.

Friday: I'll be in Atlanta from mid-morning until the wee hours with Paul, so everyone left home fends for themselves. We have reservations at Fleming's then finish our night here at the chocolate buffet. Yes, it really exists-we ate there last year!

Saturday: Bean soup and cornbread. Trust me when I say this tastes way better than it sounds! Delicious. :-)
